Aspen will ring in 2027 with a new room. Guest House, the social dining concept from RDM Hospitality, opens on December 31, 2026, in the space that was Madame Ushi, at 415 East Hyman Avenue.
The address will hold two concepts under one roof: Guest House itself, for dinner, and RSVP, the group's ultra-lounge, for what comes after. Together they seat 220. The idea behind the brand is that dinner doesn't have to end when the plates are cleared. The evening is meant to move from the table to cocktails, music and a later crowd without anyone changing buildings.
A familiar name at the door
The name that will get most of the attention is Cedric Gervais, and he is no stranger to the address. The Grammy-winning DJ and producer is the man who launched Madame Ushi, the Japanese restaurant and late-night room that has filled 415 East Hyman for the last few winters. Now he joins RDM Hospitality as a partner in Guest House Aspen, alongside the group's co-founder and CEO, Raj Kumar.
So this is less a stranger moving in than a room changing its name while keeping its host. For a concept built around music and a long night, that is a useful head start in a town that takes its après and its late nights seriously.
"Aspen is a natural next step for Guest House."
Raj Kumar, Co-Founder & CEO, RDM Hospitality
Kumar says the team wants the Aspen location to feel distinctly local while staying true to the brand, and that having Gervais involved makes this opening even more exciting for them. Gervais, for his part, sees Aspen as the right setting for the mix of food, cocktails, music and energy that Guest House is known for.
Dinner in the warm room, then the lights go down
Warm and busy: walnut tables, curved leather banquettes, a red marble bar and a painted floral ceiling hung with glass-globe chandeliers.
Darker and lower: deep velvet booths, cream lounge chairs, a coffered ceiling and a crystal chandelier over the middle of the room.
At the table
The kitchen works in elevated New American: dishes inspired by nostalgic favorites, built on seasonal ingredients, alongside a craft-forward cocktail program. The brand describes itself as a social dining and wine garden concept, made for everything from celebration dinners and date nights to happy hour, group gatherings and the late shift.
Aspen gets something the other locations don't. According to the group, it will be the first Guest House to put sushi and Asian dishes on the menu, which keeps a thread running from the room's Madame Ushi years. Chef Todd Mark Miller leads the culinary program.
The full Aspen menu has not been published. The plates below come from the existing Guest House locations, so read them as a preview of the style rather than a promise of what will be on it.
A brand on the move
Guest House began in Austin in spring 2024 and has opened a new city every year since. Aspen will be the fifth.

Our take
Opening on New Year's Eve, the busiest night of the Aspen winter, is an ambitious way to arrive. The difference here is that one of the people behind it already knows this room and this crowd. We'll be watching how a concept built in Austin and Las Vegas translates to a mountain town, and we'll report back once the doors are open. Reservations have not been announced yet; we'll update this page when they are.
