Aspen is a hard town to open a restaurant in. The sites are small, historic preservation review is slow, the building season at 8,000 feet is short, and the trades mostly drive up from down-valley. Projects here do not slip by weeks. They slip by years.
Which is why an openings list is only worth anything if it is honest about what is a date and what is a hope. Below, the two are kept apart.
Announced, not yet open

HillstoneNo firm date
The big one, and the slowest. Hillstone Restaurant Group — the group behind Houston's, and already the owner of the White House Tavern next door — bought the Seguin Building, which held Aspen Brewing Co. and Over Easy, for six million dollars in May 2017. The plan has always been to take the building down and put up a single-storey restaurant in its place. Nine years on it has still not opened. It is currently listed as coming for the autumn 2026 season. We will believe a date when a door opens.

Eddy'sNo date
The marketplace half opened in August 2026, in the old Unravel Coffee space across from the Wheeler — coffee, groceries, a grab-and-go case, daily 7am to 6pm. A sit-down restaurant alongside it has been described as coming, with no date attached to it.

Tater's SpotNo date
Listed for the former Pussyfoot Steeps space out at the ABC. No opening date published. The ABC is where a lot of the valley's genuinely good cheap eating happens, so this one is worth watching even without a date.

Everything above is either something we have seen ourselves or something with a published source, listed at the bottom of this page. What is deliberately missing is the rumour layer — the lease that has been signed, the space that is suddenly full of trades at seven in the morning, the chef who has quietly given notice.
That is the part worth having, and it does not come from the internet. It comes from people who work in these rooms. If that is you, tell us — we will check it before we print it, and we will not name you.
A note on "opening soon"
It is worth knowing how long some of these take, because it changes how you read every other list you will find.
The Hillstone site has been dark since 2017. The old Main Street Bakery has been closed since 2016. Spaces on the Hyman and Cooper malls have sat empty through multiple winters while concepts were announced, reannounced and quietly dropped. Downtown Aspen has more boarded windows than a town of this wealth ought to, and most of them belong to a short list of owners.
So when a guide tells you something is opening this winter, the fair question is: who said so, and when. We try to answer that on every line above.
